Chicken Quesadilla

Crispy, Cheesy and Easy

10-Minute Chicken Quesadilla - Serves 2


Ingredients:


  • 1 cup cooked chicken (shredded or chopped; rotisserie works great)

  • 1 cup shredded cheese (cheddar, mozzarella, or a mix)

  • 2 large flour tortillas

  • 2 tbsp salsa or hot sauce (optional)

  • 1 tbsp butter or oil

  • Sour cream, guacamole, or extra salsa for serving


Instructions:


  1. Prep Filling

    • In a bowl, mix chicken, cheese, and salsa.

  2. Assemble Quesadilla

    • Place one tortilla on a cutting board. Spread the filling evenly over half of it, then fold it closed like a taco.

  3. Cook

    • Heat butter/oil in a large skillet over medium heat.

    • Place the folded quesadilla in the pan. Cook for 2–3 minutes per side, or until golden brown and cheese is melted.

  4. Serve

    • Slice into wedges and serve with sour cream, guac, or extra salsa.


10 - Minute Chicken Quesadilla is a recipe much loved in the common family home. Its fast and makes use of that leftover chicken from the Sunday dinner.
