10-Minute Chicken Quesadilla - Serves 2
Ingredients:
1 cup cooked chicken (shredded or chopped; rotisserie works great)
1 cup shredded cheese (cheddar, mozzarella, or a mix)
2 large flour tortillas
2 tbsp salsa or hot sauce (optional)
1 tbsp butter or oil
Sour cream, guacamole, or extra salsa for serving
Instructions:
Prep Filling
In a bowl, mix chicken, cheese, and salsa.
Assemble Quesadilla
Place one tortilla on a cutting board. Spread the filling evenly over half of it, then fold it closed like a taco.
Cook
Heat butter/oil in a large skillet over medium heat.
Place the folded quesadilla in the pan. Cook for 2–3 minutes per side, or until golden brown and cheese is melted.
Serve
Slice into wedges and serve with sour cream, guac, or extra salsa.
10 - Minute Chicken Quesadilla is a recipe much loved in the common family home. Its fast and makes use of that leftover chicken from the Sunday dinner.
